About a bazillion calories, but we only make it on special occasions (like dessert for Memorial Day). We used all organic ingredients too.
This old fashioned pudding cake is so easy and sooooo yummy. It makes its own warm chocolate sauce in the bottom of the pan when it bakes. Eat it while it’s warm topped with ice cream or whipped cream. Doesn’t reheat very well but trust me, it CAN be done!! ;) It won’t last long, I guarantee you that!!
HOT FUDGE PUDDING CAKE
(from the Comfort Food cookbook by Holly Garrison)
1 cup all purpose flour (you can use white wheat or whole wheat too)
1 1/4 cups granulated sugar
2 teaspoons baking powder
6 tablespoons unsweetened cocoa powder
1/8 teaspoon salt
1/2 cup milk
2 tablespoons melted butter
1 teaspoon vanilla extract
1 cup chopped pecans or walnuts (optional)
1/2 cup firmly packed light brown sugar
1 cup water (someone suggested substituting coffee for all or part of the water. OMG, can you say ‘mocha hot fudge pudding cake’?!!)
Top with vanilla ice cream or whipped cream
Preheat oven to 375F (we used a square glass 9x9 Pyrex dish and baked on 350F)
Generously butter an 8 or 9 inch square baking pan.
Place flour, 3/4 cup of the granulated sugar, baking powder, 2 tablespoons of the cocoa, and salt in a medium-sized bowl. Mix with a wire whisk until light and thoroughly blended. (Mixing the dry ingredients with a whisk makes sifting unnecessary in this case.) Stir in milk, melted butter, and vanilla. Add nuts and mix until well combined. Scrape batter into prepared pan.
Combine remaining 1/2 cup granulated sugar, brown sugar, and remaining 4 tablespoons cocoa in a small bowl. Sprinkle over batter in pan. Pour water over top. DO NOT STIR.
Bake on the middle oven rack for 45 minutes, or until top is crusty. Remove from oven and let stand for 15 minutes. Spoon into dessert bowls, spooning sauce from the bottom of the pan over the top. Top with vanilla ice cream or whipped cream.
Makes 6-8 servings.
